Mechanically separated meat is defined as parts of meat which have been mechanically separated from the bones and in which the structure of the muscle fibres is changed.[1] It no longer falls within the food law definition of muscle meat and must be labelled accordingly in accordance with Annex VII Part B No. 18 of the European Food Information Regulation. It can be used to make many products and is a low-cost alternative to processing other meat. Mechanically separated meat is pasty after production and looks similar to minced meat, but is of a different composition.
